Instructions

  2. Reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed. Fluff with a fork after letting it sit covered for 5 minutes.
  3. While quinoa cools, chop cherry tomatoes and cucumber.
  4. In a bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. In a large mixing bowl, combine fluffed quinoa, chopped veggies, parsley, and mint. Pour dressing over and toss gently until coated.
