  • 1 cup quinoa (rinsed)
  • 1 can (15 oz) chickpeas (drained and rinsed)
  • 1/4 cup freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh basil (chopped)
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (sliced, optional)

Instructions

  1. Rinse quinoa under cold water until the water runs clear to remove bitterness.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add rinsed quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed.
  3. While the quinoa cooks, drain and rinse chickpeas. Pat dry with paper towels.
  4. In a large bowl, combine cooked quinoa with chickpeas, cherry tomatoes, and chopped herbs.
  5. In a separate bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper. Pour over the quinoa mixture and toss gently to coat.
  6. Serve immediately or chill before serving. Top with avocado slices if desired.
