Instructions

  1. Rinse quinoa under cold water until clear. In a saucepan, combine quinoa with 2 cups water or vegetable broth. Bring to a boil, then reduce heat and simmer covered for 15 minutes until fluffy.
  2. While quinoa cooks, prepare chickpeas by draining and rinsing them well.
  3. Chop cucumber and cherry tomatoes; finely chop red onion.
  4. In a large mixing bowl, combine cooked quinoa, chickpeas, chopped vegetables, and parsley.
  5. Drizzle with olive oil and lemon juice; season with salt and pepper to taste. Toss well to combine.
  6. Chill in the fridge for about 30 minutes before serving to allow flavors to meld.
