  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 cup bell peppers (red or yellow), diced
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • 1 tsp cumin
  • 1/2 tsp chili powder

Instructions

  1. Rinse and drain the black and kidney beans under cold water.
  2. Dice the bell peppers and red onion finely.
  3. In a large bowl, combine the beans, bell peppers, red onion, cilantro, cumin, and chili powder. Gently mix.
  4. In a separate bowl, whisk together lime juice and olive oil. Drizzle over the salad and toss lightly to coat.
  5. Chill in the fridge for at least 30 minutes before serving to enhance flavors.
