Instructions

  1. Rinse the turkey under cold water and pat dry. Remove giblets.
  2. Rub olive oil all over the turkey and generously sprinkle Cajun seasoning, including under the skin.
  3. Preheat smoker to 225°F (107°C) and soak wood chips in water.
  4. Place turkey on smoker grate and pour chicken broth into a pan below to catch drippings. Smoke for approximately 30 minutes per pound until internal temperature reaches 165°F (74°C).
  5. Let the turkey rest for at least 20 minutes before carving.
