  • 1 medium yellow onion, diced
  • 1 small green bell pepper, finely chopped
  • 1 cup Sloppy Joe sauce (store-bought or homemade)
  • 4 slices sourdough or Texas toast
  • 8 oz sharp cheddar cheese, sliced
  • 2 tbsp unsalted butter

Instructions

  1. In a skillet over medium heat, brown the ground beef with diced onion and green bell pepper for about 5-7 minutes until fragrant.
  2. Drain excess fat and stir in the Sloppy Joe sauce; let it simmer for 10 minutes to blend flavors.
  3. Butter one side of each slice of bread generously.
  4. On the unbuttered side of one slice, layer some cheddar cheese followed by a spoonful of the Sloppy Joe mixture, then top with another slice of cheese and cover with another slice of bread.
  5. Place the sandwich butter-side down in the skillet over medium-low heat. Grill until golden brown (3-4 minutes), then flip and cook until both sides are crispy and cheese melts.
