  • 4 large flour tortillas
  • 2 cups shredded cheese (1 cup Monterey Jack, 1 cup Cheddar)
  • 1 cup diced bell peppers (mixed colors)
  • 1 cup diced yellow onion
  • 1 cup cooked shredded chicken or black beans
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil (for baking)

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a bowl, mix diced bell peppers, onions, shredded chicken or beans, cumin, and chili powder.
