  • 2 cups low-sodium beef broth
  • 2 tsp smoked paprika
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • ½ cup sour cream for serving (optional)

Instructions

  1. In a large skillet over medium heat, brown the ground beef with the chopped onion until fragrant. Drain excess fat if necessary.
  2. Stir in minced garlic, smoked paprika, and Italian seasoning; cook for about 1 minute until fragrant.
  3. Add shredded cabbage and uncooked rice; mix well and cook for 3-5 minutes until cabbage begins to wilt.
  4. Pour in diced tomatoes and beef broth; bring to a simmer while stirring occasionally.
  5. Lower heat, cover the skillet, and cook for about 20 minutes until rice is tender. Stir occasionally.
  6. Remove from heat and stir in sour cream just before serving for added creaminess.
