  • 1 cup sweetcorn (fresh or frozen)
  • 4 large flour tortillas (or corn tortillas for gluten-free)
  • 1/4 cup fresh cilantro, chopped
  • 1 ripe avocado, diced
  • 1/2 cup Greek yogurt
  • Juice of 1 lime
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper. Cook for about 6-7 minutes on each side until golden brown and fully cooked. Let cool before shredding.
  2. In a bowl, combine sweetcorn, cilantro, avocado, lime juice, cumin, paprika, and a pinch of salt.
  3. Once cooled, shred the chicken using forks or your hands. Mix it into the filling.
  4. Place tortillas flat and spoon filling along one edge. Roll tightly from one side to another.
  5. Heat each wrap seam-side down in the skillet for about 2-3 minutes per side until crispy. Slice diagonally before serving.
