  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 medium zucchinis, sliced into rounds
  • 1 large red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 3 tbsp olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • 3 garlic cloves, minced
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Place chicken on the sheet pan and pour half of the marinade over it; let it soak while you prepare the veggies.
  4. Toss bell peppers, zucchini, onion, and cherry tomatoes in the remaining marinade until well coated.
  5. Arrange marinated veggies around the chicken on the sheet pan.
  6. Roast in the oven for 25-30 minutes or until chicken reaches an internal temperature of at least 165°F (75°C). Serve hot.
