  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 medium red onion, cut into wedges
  • 1 medium zucchini, sliced into rounds
  • 2 tbsp Cajun seasoning
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp olive oil

Instructions

  1. Rinse the shrimp and scallops under cold water; pat dry.
  2. Chop the peppers and zucchini; cut the onion into wedges.
  3. In a bowl, combine olive oil, lemon juice, Cajun seasoning, salt, and pepper; toss shrimp and vegetables to coat. Let marinate for 15-30 minutes.
  4. Thread seafood and veggies onto skewers in an alternating pattern.
  5. Preheat grill to medium-high (400°F/200°C). Grill skewers for 8-10 minutes, flipping halfway through until shrimp is pink and opaque.
  6. Serve with extra lemon juice squeezed on top.
