Instructions

  1. Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper and draw a large circle as a guide.
  2. In a clean bowl, whip egg whites on medium-high speed until soft peaks form (3-5 minutes).
  3. Gradually add caster sugar one tablespoon at a time while mixing until glossy stiff peaks form (5-7 minutes).
  4. Gently fold in white vinegar and sifted cornstarch.
  5. Spoon the meringue onto the parchment paper, shaping it into a wreath using your drawn circle as a guide.
  6. Bake for about 1 hour and 15 minutes until crisp outside but soft inside. Turn off the oven, leaving it to cool completely inside.
  7. Once cooled, whip the heavy cream until soft peaks form and spread over the meringue base. Top with fresh fruit and garnish with mint leaves if desired.
