  • 2 cups shredded mozzarella cheese

  • ¼ cup fresh basil (torn)
  • 2 tbsp olive oil
  • 3 cloves minced garlic
  • 1 small onion (finely chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the zucchini noodles by slicing them lengthwise into thin strips.
  3. Heat olive oil in a skillet over medium heat, then sauté minced garlic and chopped onion until fragrant and translucent (about 3–5 minutes).
  4. In a baking dish, spread a thin layer of marinara sauce at the bottom. Layer zucchini noodles, ricotta cheese, mozzarella cheese, sautéed veggies, and marinara sauce alternately until all ingredients are used.
  5. Top with shredded mozzarella and grated Parmesan. Cover with foil.
  6. Bake for about 30 minutes; remove foil during the last 10 minutes for browning.
