  • 1 oz taco seasoning (1 packet)
  • 1 medium onion, diced
  • 1 cup bell peppers, chopped (red or yellow)
  • 14.5 oz can diced tomatoes with green chilies
  • 4 cups tortilla chips
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • ½ cup sour cream
  • ¼ cup chopped cilantro

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a 9×13 inch baking dish with nonstick spray.
  2. In a large skillet over medium heat, cook the ground beef and diced onion until browned. Drain excess fat.
  3. Stir in taco seasoning and canned tomatoes; let simmer for 5 minutes.
  4. Layer half of the tortilla chips in the baking dish, followed by half of the beef mixture and half of the cheese.
  5. Repeat layers with remaining chips, beef mixture, and finish with remaining cheese.
  6. Bake for 20-25 minutes until golden brown and bubbly. Serve topped with sour cream and cilantro.
