- 1 pound Wagyu beef (ribeye or sirloin)
- 4 cloves garlic, minced
- 3 tablespoons ponzu sauce
- 2 tablespoons sesame oil
- 3 green onions, thinly sliced
- Salt and pepper to taste
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon fresh lemon juice
- 1 tablespoon mirin (Japanese sweet rice wine)
- Bring Wagyu beef to room temperature for about 30 minutes. Season generously with salt and pepper.
- Heat sesame oil in a skillet over medium-high heat. Sear the beef for 1-2 minutes on each side until browned but rare in the center. Rest for 10 minutes before slicing thinly against the grain.

- In a small bowl, mix soy sauce, lemon juice, mirin, and a splash of water to create the ponzu sauce.
