  • 2 cups cherry tomatoes, halved

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle olive oil inside each half and season with salt and pepper.
  3. Place the squash halves cut-side down in the baking dish and roast for about 40-45 minutes until tender.
  4. While roasting, mix cherry tomatoes, feta cheese, basil, salt, pepper, and olive oil in a bowl until well combined.
  5. After roasting, use a fork to scrape the spaghetti strands into a mixing bowl. Add the tomato-feta mixture and stir gently.
