Ingredients

Scale
  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1/2 cup peanut butter (creamy or crunchy)
  • 1/4 cup low-sodium soy sauce
  • Juice of 1 lime
  • 2 tbsp honey
  • 4 large tortillas (flour or whole wheat)
  • 2 cups fresh spinach or lettuce leaves
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers

Instructions

  1. Marinate the chicken: Combine chicken breasts with soy sauce and minced garlic in a bowl. Let marinate for at least 30 minutes.
  2. Cook the chicken: Heat oil in a skillet over medium-high heat. Cook marinated chicken for about 6–7 minutes on each side until golden brown and fully cooked. Remove and let rest.
  3. Prepare the peanut sauce: In a bowl, whisk together peanut butter, soy sauce, lime juice, and honey until smooth.
  4. Assemble the wraps: Slice the cooked chicken thinly. On each tortilla, layer spinach/lettuce, sliced chicken, shredded carrots, and cucumbers. Drizzle with peanut sauce.
  5. Roll it up: Fold in the sides of the tortilla and roll tightly from the bottom to form a wrap. Cut in half to serve.
