Teriyaki Tofu with Charred Spring Onions

  • 14 oz firm tofu
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 cloves fresh garlic, minced
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 4 spring onions, halved lengthwise
  • 2 tbsp rice vinegar
  • 1 tsp ginger paste

Instructions

  1. Prepare the tofu by draining and pressing it between paper towels for about 15 minutes. Cut into uniform bite-sized cubes.
  2. In a bowl, whisk together soy sauce, brown sugar, garlic, ginger paste, rice vinegar, and sesame oil. Add the tofu cubes and marinate for at least 30 minutes.
  3. Heat a nonstick skillet over medium-high heat and add a splash of oil. Cook marinated tofu in batches until golden brown on all sides (about 5–7 minutes per batch).
  4. In another skillet over high heat, char the spring onions in a drizzle of oil for about 4–5 minutes.
  5. Fold crispy tofu into the skillet with charred spring onions and drizzle any remaining marinade over them. Heat for an additional minute.
  6. Serve over rice or quinoa with optional sesame seeds or chopped scallions.
