  • 2 cups crisp lettuce, chopped
  • 1 cup shredded carrots
  • 1 cup bell peppers, sliced
  • 4 large flour tortillas
  • 2 tbsp sesame seeds
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tsp ginger paste
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch mixed with 2 tsp water

Instructions

  1. Slice the chicken breasts into thin strips and season with salt and pepper.
  2. In a skillet over medium heat, add a splash of oil and cook the chicken strips until golden brown and cooked through, about 5-7 minutes.
  3. In a small bowl, whisk together soy sauce, brown sugar, ginger paste, rice vinegar, and cornstarch mixture until smooth. Pour over cooked chicken and stir until combined.
  4. Allow the sauce to simmer for 2-3 minutes until thickened.
  5. On each tortilla, layer lettuce, the teriyaki chicken mixture, shredded carrots, and bell peppers. Sprinkle with sesame seeds.
  6. Fold in the sides of the tortilla and roll tightly from bottom to top. Cut in half if desired and serve warm.
