  • 4 large flour tortillas

  • 3 cloves garlic, minced

  • 1 tsp ground cumin
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 cup shredded cheese (cheddar or Monterey Jack) – optional

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, chipotle powder, cumin, salt, and pepper on a baking sheet. Roast for about 25 minutes until tender.
  2. In a skillet over medium heat, sauté the chopped onion and minced garlic until translucent (about 5 minutes).
  3. Add the roasted sweet potatoes and black beans to the skillet; cook for another 3-4 minutes until heated through.
  4. Lay tortillas flat and fill each with a portion of the mixture; sprinkle with cilantro and cheese if desired.
  5. Roll tightly from one end to form burritos. Serve immediately or wrap for meal prep.
