  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 1/4 cup powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a mixing bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth.
  3. Fold in the chopped strawberries gently into the cream cheese mixture.
  4. In another bowl, mix graham cracker crumbs and melted butter until crumbly.
  5. Press half of the crumb mixture into the bottom of the prepared pan, then spread the cheesecake filling evenly over it. Top with the remaining crumb mixture.
  6. Bake for 25-30 minutes until slightly set; let cool at room temperature before refrigerating for at least 3 hours or overnight.
  7. Slice into squares and dust with powdered sugar before serving.
