  • 12 jumbo pasta shells
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 2 tsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Boil salted water in a large pot. Cook the pasta shells until al dente; drain and set aside.
  3. In a skillet over medium heat, warm olive oil and sauté garlic until fragrant. Add spinach and cook until wilted. Combine with ricotta, half the mozzarella, Parmesan, oregano, salt, and pepper.
  4. Generously fill each shell with the spinach mixture and place them in the baking dish.
  5. Pour marinara sauce evenly over the stuffed shells and sprinkle remaining mozzarella on top.
  6. Cover with foil and bake for 25 minutes; uncover for the last 5 minutes to brown the cheese.
