  • 12 large button mushrooms
  • 1 cup fresh spinach, chopped
  • 4 oz high-quality feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1/2 tsp dried dill
  • 1/2 tsp dried oregano
  • 1/2 cup panko breadcrumbs
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Clean mushrooms and remove stems; set caps aside.
  3. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant (about 30 seconds). Add spinach and cook until wilted.
  4. In a bowl, mix sautéed spinach with feta, Parmesan, panko, lemon juice, dill, oregano, salt, and pepper.
  5. Generously fill each mushroom cap with the mixture.
  6. Place stuffed mushrooms on a lined baking sheet and bake for 20 minutes or until golden brown.
  7. Cool slightly before serving.
