  • 6 oz fresh salmon fillet
  • 3 tbsp mayonnaise

  • 2 green onions, chopped
  • 1 tbsp toasted sesame seeds
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a pot, bring to a boil, reduce heat, cover, and simmer for 20 minutes.
  2. Preheat oven to 400°F (200°C). Season salmon with salt and pepper; bake for 12-15 minutes until cooked through.
  3. In a bowl, mix mayonnaise and sriracha to create spicy mayo.
  4. Using muffin tins as molds, shape nori squares into cups.
  5. Fill each cup with sushi rice followed by baked salmon pieces, drizzle with spicy mayo, and top with green onions and sesame seeds.
  6. Serve drizzled with soy sauce.
