  • 1/2 cup sparkling water or soda

  • 1 tsp gelatin powder
  • 2 tbsp warm water

Instructions

  1. Rinse raspberries under cool water and gently pat dry. Reserve some whole berries for garnish and blend the rest until smooth.
  2. In a mixing bowl, beat softened cream cheese with sugar until smooth. Stir in vanilla extract.
  3. In a separate bowl, whip heavy cream to soft peaks and gently fold into the cream cheese mixture.
  4. Dissolve gelatin powder in warm water and fold into the mousse mixture.
  5. Carefully fold in sparkling water or soda to add fizz.
  6. Layer mousse and raspberry puree into cups, starting with mousse followed by puree.
  7. Chill in the refrigerator for at least two hours before serving.
