Instructions

  1. In a large mixing bowl, combine flour, baking powder, and salt. Gradually mix in warm water until a soft dough forms. Knead on a floured surface for about five minutes until smooth.
  2. Divide the dough into small balls (golf ball-sized). Roll each ball into circles approximately 1/4-inch thick.
  3. Heat oil in a deep frying pan over medium-high heat until shimmering (around 350°F).
  4. Fry each circle for about two minutes on each side until golden brown and puffed up.
  5. Remove sopapillas from oil and drain on paper towels. While still hot, sprinkle generously with cinnamon sugar.
