  • 1 cup shrimp, peeled and deveined

  • 2 large eggs, lightly beaten
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce (low-sodium if preferred)
  • 2 tbsp sesame oil
  • Optional: Green onions and sesame seeds for garnish

Instructions

  1. Rinse jasmine rice under cold water until clear; cook according to package instructions and let cool completely.
  2. In a skillet over medium heat, add 1 tbsp sesame oil and sauté shrimp until pink (about 2-3 minutes per side). Remove and set aside.
  3. Add beaten eggs to the skillet and scramble until fully cooked; set aside with the shrimp.
  4. If needed, add more sesame oil to the skillet. Stir-fry minced garlic and mixed vegetables for about 3-4 minutes until tender yet crunchy.
  5. Return shrimp and eggs to the skillet, then add cooled rice and soy sauce. Mix gently to combine all ingredients.
  6. Serve hot, garnished with green onions or sesame seeds if desired.
