  • 2 (6 oz) fresh salmon fillets
  • 1 sheet high-quality puff pastry (thawed)
  • 2 cups fresh spinach (washed)
  • 4 oz cream cheese (softened)
  • 2 tbsp fresh dill (chopped)
  • Zest of 1 lemon
  • 1 egg (beaten with 1 tbsp water for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix softened cream cheese, chopped dill, lemon zest, salt, and pepper until smooth.
  3. Sauté fresh spinach in a pan over medium heat until wilted (about 3 minutes). Let cool before mixing with the cream cheese mixture.
  4. Roll out puff pastry on a floured surface to about ¼ inch thick.
  5. Place one salmon fillet on half of the pastry, top with cream cheese mixture and sautéed spinach, then fold the pastry over to encase the filling.
  6. Brush the entire pastry pocket with egg wash.
  7. Bake for 25-30 minutes or until golden brown and crispy.
  8. Allow to cool slightly before slicing and serving.
