  • 1/3 cup tahini (80g)
  • 2 garlic cloves
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil (30ml)

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes until tender when pierced with a fork.
  2. Once cooled slightly, peel off the skins from the roasted beets and chop into chunks.
  3. In a food processor, combine chopped beets, tahini, garlic cloves, lemon juice, and salt. Pulse until well blended.
  4. With the processor running, drizzle in olive oil until you achieve your desired consistency. Add water if needed to thin it out.
  5. Taste and adjust seasoning by adding more lemon juice or salt as desired.
  6. Transfer the hummus to a serving bowl, drizzle with olive oil, and garnish with sesame seeds or fresh herbs before serving.
