  • 1 tsp dried basil
  • 1 tsp dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute). Add diced bell peppers and cook until slightly softened.
  3. In a baking dish, spread half of the sautéed mixture on the bottom. Layer zucchini and eggplant slices alternately on top.
  4. Season each layer with salt, pepper, basil, and thyme.
  5. Top with shredded mozzarella cheese.
  6. Bake for 30-35 minutes until bubbly and golden brown. Let cool slightly before slicing.
