  • 1/4 tsp ground nutmeg

  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup brown sugar
  • 1/2 cup oats

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, whisk together glutinous rice flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, blend pumpkin puree, melted butter, and eggs until smooth.
  4. Combine wet and dry ingredients until just mixed.
  5. For the topping, mix brown sugar, oats, and melted butter until crumbly.
  6. Pour half of the batter into the prepared dish and sprinkle with half of the topping. Add remaining batter and top with remaining crumble.
  7. Bake for 35-40 minutes or until golden brown.
