  • 2 tbsp honey
  • 2 sprigs fresh rosemary (chopped)
  • 4 garlic cloves (minced)
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • ½ cup low-sodium chicken broth
  • ¼ cup pomegranate seeds (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together pomegranate juice, honey, minced garlic, balsamic vinegar, and chopped rosemary.
  3. Pat the Cornish hens dry with paper towels. Rub them generously with olive oil and season inside and out with salt and pepper.
  4. Place the hens in a baking dish and pour the marinade over them. Marinate for at least 30 minutes.
  5. Roast in the preheated oven for about 1 hour until the internal temperature reaches 165°F (74°C), basting midway through cooking.
  6. Let rest briefly before garnishing with pomegranate seeds and rosemary sprigs. Serve warm.
