Ingredients

Scale
  • 1 store-bought pie crust (9-inch)
  • 1 lb Italian sausage (sweet or spicy)
  • 8 oz fresh mushrooms (cremini or button), sliced
  • 1 cup bell peppers (varied colors), diced
  • 1 medium sweet onion, chopped
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a deep-dish pie pan or casserole dish.
  2. Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until softened (about 5 minutes).
  3. Add crumbled sausage and sliced mushrooms to the skillet. Cook until the sausage is browned and mushrooms are tender (approximately 7 minutes).
  4. Stir in minced garlic, oregano, and basil; cook until fragrant (about 1 minute).
  5. Remove from heat and mix in mozzarella and chicken broth until creamy. Pour filling into the prepared pie crust and cover with another layer of crust, crimping edges to seal. Cut slits on top for steam to escape.
  6. Bake for 25-30 minutes or until golden brown on top. Let cool slightly before serving.
