Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Cook the rotini pasta in salted boiling water until al dente. Drain and set aside.
  3. In a skillet over medium heat, brown the ground beef; drain excess fat. Stir in pizza sauce and Italian seasoning.
  4. In a large bowl, combine cooked pasta with beef mixture and half the mozzarella cheese along with mixed vegetables.
  5. Layer half the pasta mix in the baking dish, sprinkle with more cheese, add remaining pasta mixture, and top with the rest of the cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
