  • 1 cup unsalted roasted pistachios (chopped)
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup espresso or strong coffee (cooled)
  • 3 tablespoons cocoa powder
  • ½ cup granulated sugar
  • 24 Savoiardi (ladyfingers)

Instructions

  1. Brew espresso or strong coffee and let it cool.
  2. In a mixing bowl, whip heavy cream and sugar until soft peaks form.
  3. In another bowl, mix mascarpone until smooth. Gently fold in whipped cream until combined.
  4. Quickly dip each ladyfinger into the cooled espresso and place them in a dish.
  5. Layer dipped ladyfingers, spreading half of the mascarpone mixture on top, then sprinkle half of the chopped pistachios. Repeat the layers.
  6. Dust cocoa powder over the top and refrigerate for at least 4 hours or overnight.
