  • ¾ cup granulated sugar
  • ¼ cup honey
  • 1 tsp ground cinnamon
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl. Press mixture into the bottom of a 9-inch springform pan to form the crust.
  2. Chop half of the pistachios and sprinkle over the crust. Bake for about 10 minutes until lightly golden.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, honey, cinnamon, vanilla extract, and eggs one at a time until well combined.
  4. Pour filling over the baked crust and bake for 50-60 minutes until edges are set but center remains slightly jiggly.
  5. Turn off oven and leave cheesecake inside with door ajar for one hour to cool gradually.
  6. Refrigerate for at least four hours or overnight before serving. Drizzle with honey and sprinkle remaining pistachios on top.
