  • 1 tsp mint extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt; set aside.
  3. In a large bowl, cream the butter with granulated and brown sugars until light and fluffy (about 3 minutes).
  4. Beat in the eggs one at a time, then add vanilla and mint extracts (and food coloring if using).
  5. Gradually mix in the dry ingredients until just combined. Fold in chocolate chips.
  6. Drop rounded tablespoons of dough onto prepared sheets about two inches apart.
  7. Bake for 10–12 minutes until edges are golden but centers remain soft.
