  • 12 pre-made pastry shells
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup goat cheese, crumbled
  • 1 cup bell peppers (mixed colors), diced
  • 1 cup zucchini, grated (excess moisture squeezed out)
  • 1 cup fresh spinach, chopped
  • 1 tsp fresh thyme (or basil)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place pastry shells in muffin tins and press gently.
  3. In a skillet over medium heat, sauté bell peppers and zucchini for about 5 minutes until tender. Add spinach until wilted.
  4. In a bowl, whisk together eggs, milk, salt, pepper, thyme, and half of the cheddar cheese.
  5. Spoon the sautéed vegetables into each pastry shell and pour egg mixture on top until nearly full.
  6. Sprinkle remaining cheese over each quiche.
  7. Bake for 20-25 minutes until puffed up and golden brown.
