Instructions

  1. Preheat your oven to 350°F (175°C). Lightly spray a muffin tin with nonstick cooking spray.
  2. Roll out the pie crust on a floured surface and cut out circles (about 3 inches in diameter). Press them into the muffin tin.
  3. In a bowl, whisk together melted butter, brown sugar, eggs, and vanilla until smooth. Fold in chopped pecans.
  4. Spoon the filling into each crust until just full.
  5. Bake for 20-25 minutes or until golden brown. Allow to cool slightly before removing from the tin.
