Instructions

  1. Prepare the filling by sautéing chopped mushrooms and shallots in a hot pan until golden brown (about 5-7 minutes). Allow to cool.
  2. Season the beef tenderloin with salt and pepper, then sear in a hot skillet until browned on all sides.
  3. Spread Dijon mustard over the cooled beef.
