  • 2 lbs sweet potatoes, peeled and chopped
  • 1/2 cup pure maple syrup
  • 1 cup heavy cream
  • 4 tbsp salted butter
  • 1 tsp ground cinnamon
  • 1/2 cup pecans, toasted and chopped (plus more for topping)
  • 1/2 cup bread crumbs (whole wheat or gluten-free)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil sweet potatoes in a saucepan with water until fork-tender, about 15-20 minutes.
  3. Drain potatoes and mash them in a bowl with heavy cream, maple syrup, butter, cinnamon, salt, and pepper until smooth.
  4. Stir in half of the toasted pecans.
  5. Layer half of the sweet potato mixture in a greased baking dish; sprinkle with half of the remaining pecans. Add the rest of the sweet potato mixture on top.
  6. Mix breadcrumbs with additional chopped pecans and sprinkle over the top layer.
  7. Bake for 25-30 minutes until golden brown and bubbly. Let rest for 5 minutes before serving.
