  • 24 ladyfingers
  • 1 cup mascarpone cheese
  • 1/2 cup limoncello
  • 1/2 cup granulated sugar
  • 3 large eggs (separated)
  • 1/4 cup unsweetened cocoa powder
  • 1 cup heavy whipping cream

Instructions

  1. Prepare all ingredients on your counter. In a mixing bowl, whisk mascarpone cheese and granulated sugar until smooth. Gradually add limoncello while whisking.
  2. In another bowl, whisk egg yolks until pale and fluffy, then fold them into the mascarpone mixture.
  3. In a clean bowl, whip egg whites until stiff peaks form and gently fold them into the mascarpone mix.
  4. Briefly dip ladyfingers in a mixture of limoncello and water (optional) to soften without falling apart.
  5. Layer half of the dipped ladyfingers in a serving dish, followed by half of the mascarpone mixture. Repeat with another layer of ladyfingers and finish with the remaining mascarpone.
  6. Cover with plastic wrap and refrigerate for at least 4 hours or overnight. Before serving, dust with cocoa powder.
