  • 34 lbs beef chuck roast
  • 2 medium yellow onions, chopped
  • 6 cloves garlic, minced
  • 1-inch piece fresh ginger, sliced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup light brown sugar
  • 1 tbsp sesame oil
  • 1 cup water or beef broth

Instructions

  1. Gather all ingredients; chop onions and slice garlic and ginger.
  2. Mix soy sauce, brown sugar, sesame oil, garlic, and ginger in a bowl to create the marinade. Place the beef in a resealable bag with the marinade and refrigerate for at least 2 hours or overnight.
  3. Preheat oven to 325°F (160°C). Sear the marinated roast in a Dutch oven over medium-high heat until browned on all sides (about 4 minutes each).
  4. Remove roast; sauté chopped onions in the same pot until softened (about 5 minutes).
  5. Return roast to pot with remaining marinade and add water or broth. Cover tightly.
  6. Cook in the oven for approximately 3 hours or until fork-tender.
