  • 1 medium carrot (diced)
  • 1 medium potato (diced)
  • 2 cups low-sodium vegetable broth
  • 2 tbsp soy sauce

Instructions

  1. Prepare the katsu by setting up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Season chicken thighs with salt and pepper. Dredge each thigh in flour, dip in eggs, then coat with panko.
  2. Heat oil in a skillet over medium heat. Fry the breaded chicken for about 4-5 minutes per side or until golden brown. Remove and set aside.
  3. In another pot, heat oil over medium heat and sauté chopped onions and ginger until fragrant.
  4. Add diced carrots and potatoes along with curry powder. Stir to combine.
  5. Pour in vegetable broth, simmering on low heat for about 20-25 minutes until vegetables are tender.
