  • 4 cups sourdough bread, cubed
  • 1 lb Italian sausage, crumbled
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 1 cup low-sodium chicken broth
  • 2 large eggs, beaten
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh sage, chopped
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cube sourdough bread and let sit to dry slightly.
  2. In a skillet over medium heat, add olive oil and sauté onions and celery until softened. Add crumbled sausage and cook until browned.
  3. In a large bowl, mix the sautéed mixture with bread cubes. Gradually add chicken broth until moistened but not soggy. Stir in beaten eggs and herbs.
  4. Form bite-sized portions and place on a parchment-lined baking sheet with space between pieces.
  5. Bake for 25-30 minutes or until golden brown and crispy. Serve warm.
