Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, melt butter or heat olive oil. Sauté chopped onion and celery until translucent (about 5 minutes).
  3. Cut gluten-free bread into bite-sized cubes and toast them on a baking sheet in the oven for about 10 minutes until golden brown.
  4. In a mixing bowl, combine toasted bread cubes with sautéed veggies and herbs. Gradually add vegetable broth until the mixture is moist but not soggy.
  5. Transfer to the greased baking dish, cover with foil, and bake for about 30 minutes. Remove foil during the last 10 minutes to crisp the top.
