Instructions

  1. Brew espresso and let it cool slightly.
  2. In a bowl, whisk mascarpone, heavy cream, sugar, vanilla, cinnamon, and nutmeg until fluffy peaks form (3-5 minutes).
  3. Combine cooled espresso and milk in a shallow dish.
  4. Dip each gingerbread cookie quickly into the espresso mixture and layer at the bottom of your serving dish.
  5. Spread half of the cream mixture on top of the cookies.
  6. Repeat layering with remaining cookies and cream mixture.
  7. Cover and chill for at least 4 hours (overnight for best flavor).
