  • 2 large eggs (room temperature)
  • ½ cup whole milk (or almond milk)
  • ½ cup brewed coffee or espresso powder
  • 1 tsp pure vanilla extract
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, mix melted butter, eggs, milk, coffee or espresso powder, and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients and stir gently until combined.
  5. Spoon the batter into the lined muffin tin about two-thirds full and bake for 18-20 minutes until golden brown.
  6. Cool completely before frosting with cream cheese frosting.
