  • 1 head of garlic (whole cloves)
  • 1/4 cup fresh rosemary (chopped)
  • 1/4 cup fresh thyme (chopped)

  • 1/4 cup extra virgin olive oil
  • Zest of 1 lemon
  • 2 tsp salt
  • 1 tsp black pepper
  • 1/2 cup softened butter
  • 1 cup chicken broth

Instructions

  1. Thaw the turkey completely if frozen. Pat dry with paper towels and place breast-side down on a cutting board.
  2. Cut along both sides of the backbone with kitchen shears to remove it. Flip the turkey over and press down on the breastbone to flatten.
  3. In a bowl, mix minced garlic, chopped herbs, lemon zest, olive oil, salt, and pepper. Rub this mixture all over and under the turkey skin.
  4. Preheat your oven to 450°F (232°C) and place the turkey on a lined baking sheet with wing tips tucked under to prevent burning.
  5. Roast for about 1 hour to 1 hour 15 minutes or until the internal temperature reaches 165°F (74°C). Baste occasionally with pan juices.
  6. Let rest for at least 20 minutes before carving to allow juices to redistribute.
