- 1 head of garlic (whole cloves)
- 1/4 cup fresh rosemary (chopped)
- 1/4 cup fresh thyme (chopped)
- 1/4 cup fresh sage (chopped)
- 1/4 cup extra virgin olive oil
- Zest of 1 lemon
- 2 tsp salt
- 1 tsp black pepper
- 1/2 cup softened butter
- 1 cup chicken broth
- Thaw the turkey completely if frozen. Pat dry with paper towels and place breast-side down on a cutting board.
- Cut along both sides of the backbone with kitchen shears to remove it. Flip the turkey over and press down on the breastbone to flatten.
- In a bowl, mix minced garlic, chopped herbs, lemon zest, olive oil, salt, and pepper. Rub this mixture all over and under the turkey skin.
- Preheat your oven to 450°F (232°C) and place the turkey on a lined baking sheet with wing tips tucked under to prevent burning.
- Roast for about 1 hour to 1 hour 15 minutes or until the internal temperature reaches 165°F (74°C). Baste occasionally with pan juices.
