  • 6 frozen burritos (10 oz each)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup medium salsa
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 cup sour cream (or Greek yogurt for a healthier option)
  • 2 green onions, chopped
  • Fresh cilantro (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray a 9×13-inch baking dish with nonstick spray.
  3. Layer the bottom of the dish with frozen burritos.
  4. Top with black beans and half of the salsa, followed by half of the cheese.
  5. Repeat the layers with remaining burritos, beans, salsa, and finish with the remaining cheese.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
